Entrepreneur Turns Palm Tree into Signature Dessert
An Abu Dhabi entrepreneur is gaining international recognition after transforming one of the UAE’s most iconic symbols “the palm tree” into a unique range of premium soft serve ice creams. Over the past three years, Amira A, founder of Ice Station, has developed 145 flavors using palm tree ingredients, including fresh dates, dried dates, roasted date seeds, palm pollen and even palm fronds.
Her creativity has since expanded to 447 original ice cream flavors, many inspired by traditional Emirati desserts and dishes such as luqaimat, balaleet, aseeda, khabees, qurs bread, rahash, and talbina. Beyond creating unusual flavors, Amira aims to preserve the UAE’s cultural heritage by introducing traditional tastes in a form that appeals to younger generations.
A Different Vision for Ice Cream
Amira’s journey began during a professional ice cream training course in Kuwait. While learning about commercial ice cream production, she was surprised to discover how heavily the industry depended on artificial flavorings, preservatives, powdered mixes and large amounts of added sugar.
The experience inspired her to follow a different path. Instead of using artificial ingredients, she decided to make ice cream using natural products wherever possible. She avoids unnecessary additives and relies on fruits and traditional ingredients to provide natural sweetness and color.
Although she does not describe her products as “healthy,” Amira prefers calling them a “less harmful” alternative because they contain fewer artificial ingredients while still acknowledging that natural sugars remain sugars.
Years of Research and Experimentation
Building a natural ice cream business was far from easy. Without commercial stabilizers or ready-made ice cream bases, every recipe had to be developed from scratch.
Amira revealed that she broke more than 15 ice cream machines while trying to perfect the creamy texture she envisioned. She spent months experimenting with ingredients before finding the right formula.
Determined to improve her skills, she travelled across the Middle East, Europe and other countries, completing 21 professional training courses to study the science of ice cream production.
Bringing Emirati Heritage to Young Generations
Rather than copying international flavors, Amira wanted her products to celebrate Emirati culture. She drew inspiration from the palm tree, a symbol of the UAE’s history, resilience and generosity.
While visiting Abu Dhabi’s Mina Market, she noticed tourists eagerly purchasing local dates while many young Emiratis seemed less connected to traditional foods. That observation motivated her to transform heritage recipes into ice cream flavors that younger people would enjoy.
She recalled one memorable moment when a young customer recognized the taste of a traditional dessert after trying one of her creations. His father explained that it was a sweet commonly served with coffee during Ramadan and Eid, reinforcing Amira’s belief that food can reconnect younger generations with their cultural roots.
Innovation Beyond Traditional Ingredients
Amira continues to experiment with unique ingredients from around the world. She has imported pink pineapples from Costa Rica, explored rare fruits such as black sapote and barberries, and even created an Emirati version of the Italian affogato by pairing date-flavored soft serve with coffee brewed from roasted date seeds.
One of her most unusual creations is palm frond ice cream, which many customers initially mistake for matcha because of its color and flavor profile.
Global Recognition and Future Goals
Ice Station has earned several international awards for innovation and has attracted franchise offers from across the Middle East and Europe. However, Amira has declined rapid expansion opportunities, believing that growth should never compromise quality or the philosophy behind her brand.
Her long-term ambition is to make Ice Station a globally recognized Emirati brand.
She hopes that one day, just as Italy is celebrated for gelato, Abu Dhabi will become internationally known for its natural premium soft serve. For Amira, every scoop represents more than dessert—it is a way of preserving Emirati heritage through creativity and innovation.
